  • Disease resistant If your land is moist, hybrids are probably going to do better for you than heirlooms. In coastal Santa Barbara CA we usually have a late spring/summer fog belt/marine layer, locally referred to as the May grays, June glooms and August fogusts. Choose Resistant varieties per the list below and also Potato Yellow Mosaic Virus, Pepper Mottle Virus and  Cucumber Mosaic Virus.

  • Heat tolerant

    Peppers are a Solanacea like tomatoes, and like tomatoes they produce poorly during high temperatures. Banana, ‘Gypsy’ and pimento produce very well, despite the heat. Jessie Keith says ‘super spicy classic jalapeno ‘Tula’, wonderfully flavorful pasilla-type pepper ‘Holy Molé’ (2007 AAS Winner), and classic spicy sweet red bell pepper ‘Mexibell’ (1988 AAS Winner). Of the sweet bell peppers nothing beats the tough, [thick walled] disease-resistant ‘Orange Blaze’ (2011 AAS Winner) and its crisp, bright orange peppers.’ Heirloom Olympus (65 days green, 85 days red) has large bell peppers on medium-sized plants with good leaf cover. They are high-yielding plants, are heat tolerant and can set fruit under a wide range of conditions. MG Seed Stock.If you planted varieties that are more heat susceptible, put up a shade cloth cover. Depending on the density you select, shade cloth can lower the temperature by approximately 5-15 degrees.If you live in a hot area, bell pepper transplants can be planted in August for fall production when the weather cools down.

  • Drought tolerant Look for the terms drought tolerant, drought resistant, dry farmed when searching for the best variety for your garden. It’s important to know that drought tolerant doesn’t necessarily mean heat tolerant and vice versa, so stay alert if you need both. When you are buying seeds, consider the location of the seed company. Perhaps local seed houses will understand your needs best. Check in with local farmers to see which varieties they are growing, remembering that some of their standards are different than a home gardener.For those of you in water critical areas, one way to help the situation is to pick pepper varieties with fewer days to maturity. You get peppers, you can freeze some, your plants are done before the highest heat and driest times.The UC Sonoma County list is short. Only two varieties, Jupiter Red Bell and Ordoño.

Location! If you have a short summer season or are cooler and coastal perhaps, choose earlier smaller fruited varieties than ones that need a long hot summer to fully mature and if necessary change color too.

Planting

Peppers are Temp Particular! Peppers grow best in daytime air temperatures 65° to 85°F. Transplant when night time temperatures stay above 50 degrees, 55 is better. Below that plants grow very slowly, have yellowish, puckered leaves, and look sickly, often don’t recover. Night temps between 60° and 70° are best. The ideal temperature for peppers is a daytime temperature around 75°F and a nighttime temperature around 62°F.

At soil temperatures above 65 degrees, pepper growth accelerates. If either the soil or air temperature is much below 55 degrees, blossoms of transplants may drop off. The plants may survive and more blossoms will appear. But it is more likely plants will become stunted and never recover. If your plant is puny and showing no growth, best to compost it and replant when it is warmer.

  • Nighttime temperatures below 60 F or above 75 F can reduce fruit set. In daytime temperatures greater than 85°F, peppers may drop their blossoms although set fruit will ripen. When daytime temps reach 90 F and above, and stay there, just like with tomatoes, the blossoms seldom set fruit. Not to worry. Just give them some time after temps are lower.
  • Plumping up! Gardeners in hot regions will need to be especially patient with big bells and sweet roasting peppers. Both of these tend to wait until the nights are longer and cooler in late summer before fruiting and plumping up. These folks may want to plant banana peppers or sweet non-bells, which will ripen in time to use with those bumper crops of tomatoes and basil. Peppers need time on the plant to absorb nutrients and water and plump up their flesh, so pack your patience.
  • Color Changes! Mother Earth News says: After reaching their maximum size, green peppers that are meant to turn red, will develop red pigments in 10 to 28 days, if daytime temperatures are between 65 degrees and 75 degrees. In southern regions where temperatures exceed that range, peppers turn yellowish and may acquire an off-color pallor that is not attractive. Below the optimum temperature range, color development slows dramatically; below 55 degrees, it stops completely. If soil temperatures drop below 68 degrees, pigment production declines and eventually ceases.

Peppers love sun, but a bit of shade is good for the fruit. I planted a Poblano between two big tomato plants. For awhile I thought it was a goner, shaded out, then, it just grew and grew! It got almost 4′ tall and produced like crazy and I gave giant peppers away!

Peppers need VERY RICH SOIL, are heavy feeders! Place compost for water holding capacity, worm castings, rotted manure under them when transplanting. Mix in Maxi Crop and Island Seed & Feed Landscape Mix. Sandy soils are preferred for the earliest plantings because they warm more rapidly in the spring. Heavier soils can be quite productive, provided they are well drained and irrigated with care.

Epsom Salts! Rather than in the soil, do foliar Epsom Salts! A cheap home remedy that can keep plants greener and bushier, enhance production of healthier fruit later in the season, and potentially help reduce blossom-end rot. You could apply 1 tablespoon of granules around each transplant, but research has shown a foliar spray of a solution of 1 tablespoon Epsom salts + a 1/2 teaspoon of liquid dish soap (Dawn) per gallon of water at transplanting, first flowering, and fruit set is more effective! As a foliar spray, Epsom salts can be taken up quickly by plants, otherwise, it is sometimes hard for the plant to get it out of the soil because of calcium competition.

Plant your peppers about a foot to 18″ apart.  A healthy pepper will get big and top heavy with fruit! It is wise to put small tomato cages over thick wall bell pepper varieties when you plant, to support the weight when they are heavy with fruit.

Though a perennial, they are very susceptible to freeze. With Bell peppers, I have heard a lot of people say their peppers overwintered and produced just fine the following year, but I have not seen that to be true at the community gardens. They are never as robust nor do they produce the big healthy fruits first year plants do. If you are one of the lucky ones, by all means, protect them when there are freezes.

Hot peppers are another story. They seem to do a lot better overwinter, depending on the variety, and I have seen them carry on wonderfully!

Care

Personal Mulch! Solanaceae, that’s peppers, tomatoes, eggplants, like mulch from their own leaf litter, so just let the leaves fall and accumulate. In hot summer weather your peppers will appreciate a heavy mulch. Several inches of straw or dried grass clippings will keep the soil cooler and reduce moisture evaporation. Continually moist ground is a necessity for peppers, as they, like tomatoes, suffer from blossom end rot, a physiological disease caused by a calcium deficiency. Most soils contain ample calcium, but the mineral relies on water to transport it to the plant’s root system. When the soil lacks moisture, the calcium can’t reach the plants and a tell-tale black leathery spot forms on the blossom end of developing fruit. Heavy Nitrogen fertilizer applications can also induce a transient calcium deficiency. I emphasize that you give your peppers plenty of compost for water holding capacity and keep them well mulched!

Peppers, have shallow roots, need even wateringKeep the soil moist, not soggy, to encourage root development and prevent blossom wilting and bitter-tasting peppers. Moisture stress during bloom can cause substantial reduction in fruit set.

Later on, however, as a friend from Farmers Market pointed out: ‘Red & yellow peppers are green peppers that have been ripe for a while. So you are asking an already ripe fruit to stay on a vine longer to change color. Too much water, and the pepper will start to turn brown and rot. So we switched to watering a LOT less frequently and the results have been outstanding.’

Sidedressing Peppers need fertilizer in small doses, a rich organic fertilizer when blooms appear. If you scratch in some compost, be careful not to damage their shallow roots. Liquid chicken manure is high in nitrogen and potassium for heavy feeders like peppers. Big, sweet peppers require a continual source of nutrition. The easiest way to fertilize them is to incorporate gradual-release fertilizer in the ground at planting. Fish-meal pellets, alfalfa pellets or cottonseed meal are all good organic choices. You also can foliar-feed plants every week or two with a fish/seaweed soluble fertilizer, spraying the tops and bottoms of leaves, or water the ground with the same mixture.

Replenish mulch as needed throughout summer! You might schedule a mulch check for them and all your plants once a month.

Annual or Perennial? Technically peppers are perennials, grow year after year – in the right climate. Some chiles overwinter well in Santa Barbara. Bell peppers are another story. Geographically, in Santa Barbara CA they are temp sensitive annuals! I’ve heard claims about them overwintering in the garden successfully, but I have yet to see it. If you like to do it, better to pot your pepper before any frosts and take it indoors by a sunny window or into your fine greenhouse! You have a couple choices. Prune it ruthlessly, or keep it growing, even producing, with lights and bloom sprays. There are many online threads about overwintering your peppers. Check out tips from several experts to make your efforts count!

Personally, there are so many tasty fresh winter foods that grow well here in our SoCal ‘winter,’ that I am more than happy to replant peppers in spring!

Bell peppers are at their sweetest and are highest in Vitamins A,  C and carotenoids when fully mature! When choosing bell peppers for eating, select those that are firm, heavy for their size with shiny, bright and vibrant richly colored skin! The bell pepper’s sweetness increases as their color changes from green to their final color if they are a color changing variety.

Their stems should be green and fresh looking. To avoid breaking branches, use a sharp knife to cut, instead of pulling.

It’s nice to know that if not optimally ripe vitamin C and carotenoids in bell peppers will actually increase with refrigerator storage over the next 10 days!

Storage

For maximum flavor, eat peppers on the same day they are picked! Room temp is best for peppers, leave them on a kitchen counter for a day or two to ripen further. Rinse with cold water just before you use them. Bell peppers are very sensitive to ethylene gas so don’t store them with fruits and vegetables that produce ethylene gas. If you put them in the fridge, do it only 1-3 days and use immediately upon taking out of the fridge. Don’t remove their cores because they are quite susceptible to moisture loss. Peppers are warm-weather fruits that don’t store well in cold temps. If you have too many peppers, consider the following storage options.

Freezing This is the easiest storage method. Peppers freeze well without blanching. Thawed peppers still retain some crispness and can be used in cooked dishes or raw in uncooked preparations. Their flavor is retained, so use frozen peppers primarily for adding ‘spice’ to soups, stews, and sauces. If you stuff the peppers before freezing, you’ll have a ready-made dinner, perfect for the microwave.

To Tray Freeze Sweet Bell Peppers

Wash and core peppers. Chop, dice or slice according to how you plan to use them.
Spread in a single layer on a tray of a cookie sheet. Place tray in the freezer for an hour or longer. Loosen pepper pieces from the tray and pour into zip closure freezer bags. Immediately place sealed bags in the freezer. The pepper pieces will remain separated for ease of measuring. Simply remove as many as you need, reseal the bag and return to the freezer. Or bag them separately in the amounts you plan to use them.

Pickling/Canning Peppers are low-acid fruits so require canning under pressure. It’s easier to pickle peppers as you would cucumbers in a crock filled with a simple brine of four cups of water, four cups of vinegar, and 1/2 cup of pickling salt. Add a clove or two of garlic and some fresh herbs for delicious added flavor.

Sweet Banana, Sweet Hungarian, Cubanelle are long, narrow tapering down to one, two or three lobes. They are thin walled, Cubanelle the thinnest. They are usually picked when light yellow or green. Because they have less water content than bells, they are perfect for frying. ‘Sweet Banana’ was the 1941 All America Selections Winner!

Pepper! Colorful Decorative Ristras!Drying This method works best with thin-walled peppers, particularly the smaller varieties that can be dried whole right on the plant. The key to drying peppers is doing it slowly to retain their color and flavors. Perfect for spicing up bland backpacking meals!

You can grind chiles into culinary or medicinal powders! They retain their lovely colors! Paprika is a dried powdered form of bell pepper, and though we are used to seeing red paprika, a paprika can be made from any color of bell pepper and it will end up being that same color. Both the decorative forms and these potent powders make sensational gifts!

Seed Saving

To prevent cross-pollination, hot pepper plants should not be planted near sweet or bell pepper plants. TRUE! Plant at least 400 feet between varieties to ensure absolute purity. That’s important info for seed savers!

Harvest mature, fully-ripe peppers for seed. Most bell peppers turn red when fully mature. If frost threatens before peppers mature, pull entire plant and hang in cool, dry location until peppers mature.

  • There are two methods to process pepper seeds, dry and wet. The dry method is adequate for small amounts. Cut the bottom off the fruit and carefully reach in to strip the seeds surrounding central cone. In many cases, seeds need no further cleaning.
  • To process the seed from large amounts of peppers, cut off the tops just under the stem, fill a blender with peppers and water and carefully blend until good seeds are separated and sink to bottom. Pepper debris and immature seeds will float to the top where they can be rinsed away. Spread clean seeds on paper towel and dry in cool location until seed is dry enough to break when folded.

FYI Birds are not sensitive to capsaicin, the heat factor in chilli peppers, and are therefore the main dispersers of the seeds!

Pepper Hot Oil & Healing Spices

Remedies: Hot Oil! Healing Spices. The countless health benefits claimed are exciting and enormous! Cayenne is said to stop heart attacks. Hot oil works wonders on knees.

Nutrition: I’m not sure people really eat peppers for nutrition, LOL! Peppers are in a food category all their own! Choices are made according to the Scoville Scale, how hot or not they are! At the lower end of the scale, nutrition may factor in somewhat, but it is more likely a visual choice, shape and color, whether for salad or type of cooking you will use the pepper for.

Sweet luscious Bell Peppers have a whopping 169% of the daily value of Vitamin C we need, but who thinks of peppers as a source of Vitamin C?! More we think of low calories, but most of all, that delicious taste! But look, here’s more! Absorption of dietary iron is significantly increased when consumed with fruits or vegetables that are high in vitamin C. Eating raw bell peppers with iron-rich foods like meat or spinach, may help increase your body’s iron stores, cutting the risk of anemia. Eat peppers!

Absolute Culinary Delight!

Mexican recipes are classic! Salsa! Chile Rellenos! Add to burritos, roll-ups and tacos. Stuff and eat fresh, hot pockets! Roasted, grilled on the barbie! Pickled. Fine chopped in tuna or chicken salad! Go Cajun by sautéing with celery and onion, then mix with tempeh, chicken, seafoods. Stir fry some bits in the wok with cashews, shrimp and Oriental veggies. Puree in summer zucchini soups, hot or cold. Add color and crunch to your dip tray, make a pureed pepper dip! Pizza topping. Fresh slices in a cool Romaine, cucumber, avocado salad – add black beans for protein!

I had to laugh when I saw this image and its reference to an ‘unsightly back yard!’ It was in the Washington Times Magazine Section April 29, 1906, listing Facts & Figures on how much you can save by gardening. They spoke of how it ‘enter[s] the mind every spring and summer,’ and, of course, here today in SoCal in the Fall as well when ‘winter’ planting is late August to October! Perfect timing to have come across this at a season change planting time!

So how about it?! LOL! Do you have an unsightly back yard that could be converted? And how hard would it be to do that?!

1 Cost of your time – Gain of outdoor communion with the sky, the earth, plants and creatures – soil organisms, tiny, furry, scaly, feathered, amazing insects

2 Some sore muscles? Maybe. Overall health improves, for some dramatically! The freshest from garden to table. No plastics, no food miles pollution. Likely some morning dew on your feet….

3 Purchase tools, gloves, soil builders, seeds, transplants. The organic veggies return will more than pay for those in one season. You get to make great new friends at the nursery!

4 Yes, there will be wins and losses, some losses inexplicable. But, oh, the satisfaction! Proud of your harvests, your heart feels happy to share your bounty with friends, loved ones, and if enough, donate.

5 There is some daily care that makes sense. Things grow better that way. A little water, weed pulling, this and that. For many it’s like a quiet time after work, a meditation. But no over watering!

One of the gardeners in the Times article produced so much she and her children sold their extra at market and paid their 1906 taxes on their home with that income!

If the unsightly backyard doesn’t call you, what about that unsightly front yard?!

International Year of Pulse Crops 2016

2016 International Permaculture Day is using this phrase: feed soil and people with pulses! What are Pulses and what do they do?!

Pulse crops Pulse: from the Latin puls meaning thick soup or potage, pulses are the edible seeds of plants in the legume family. Technically, the term “pulse” is reserved for crops harvested solely for DRY SEED.That would be DRIED peas, edible beans, lentils and chickpeas/garbanzo. Pulses are very high in protein and fibre, low in fat.

Importantly, pulses are nitrogen-fixing crops that improve the environmental sustainability of annual cropping systems. Many of you know that means they take Nitrogen from the air, ‘fix’ it in little nodules on their roots, in essence, gather their own Nitrogen, N being what plants need to live and grow. Planting these crops densely feeds your soil.

There’s more!!! Pulse Canada has gathered the data!

  • Pulse crops produce a number of different compounds that feed soil microbes and benefit soil health.
  • Pulse crops have a significant impact on soil biology, increasing soil microbial activity even after the pulses are harvested.
  • Pulses have also been shown to exude greater amounts and different types of amino acids than non-legumes and the plant residues left after harvesting pulse crops have a different biochemical composition (e.g. Carbon/Nitrogen ratio) than other crop residues.
  • The ability of pulses to feed the soil different compounds has the effect of increasing the number and diversity of soil microbes.

Definitely crops grow better in soils that are more “alive” with a diverse array of soil organisms! These organisms break down and cycle nutrients more efficiently, feeding the crops as they grow, helping crops to access nutrients.

In addition, a large, diverse population of soil organisms ‘crowds out’ disease-causing bacteria and fungi, making for healthier plants. Growing pulses breaks disease, weed and insect cycles. But of course!

Growing pulse crops in ROTATION with other crops enables the soil environment to support these large, diverse populations of soil organisms. That’s why we grow ‘green manure’ crops – bell beans (a small variety of fava), Austrian peas, vetch mixes – over winter to feed upcoming summer crops. When you remove plantings of peas or beans, cut them off at ground level rather than pull and remove those roots with the valuable nodules!

When & Where to Plant Other than for food, plant pulse soil feeding cover crops, green manure, when you want to take a break. Don’t just let your land go, give it something to do while you are away. Let it feed and restore itself! It’s so easy to do. Just wet the seed with an inoculant & fling the seed about! Keep the seedlings moist until they are up a bit, then all you have to do is water once a week or so, the plants will do the rest. If your climate is warm enough, plant one area each winter. Let it rest from other soil using crops. Plant where you will grow heavy feeders like tomatoes the following summer.

Pulse Nutrition!

Pulses provide a number of nutritional benefits that positively impact human health! Pulse is gluten-free, can reduce “bad” cholesterol, has a low glycemic index, and virtually no fatSee more!

Pulses taste great. Rich in fiber and protein, they also have high levels of minerals such as iron, zinc, and phosphorous as well as folate and other B-vitamins. High in protein, they reduce the environmental footprint of our grocery carts. Put it all together? Healthy people and a healthy planet.

Pulses come in a variety of shapes, sizes and colours and can be consumed in many forms including whole or split, ground into flours or separated into fractions such as protein, fibre and starch. That could be delicious red bean salsa, chiles, split pea soup, plain or spiced hummus, falafel balls! Dairy free pulse cakes and cheesecakes, ice cream!

Pulses do not include fresh beans or peas. Although they are related to pulses because they are also edible seeds of podded plants, soybeans and peanuts differ because they have a much higher fat content, whereas pulses contain virtually no fat.

Nutritious and Beautiful Rainbow Lacinato KALE!

Its leaves are amazingly convoluted, and it keeps growing as you pick, tall and taller, up to 7′! In healthy soil it may make side plants along its naked stem. It’s disadvantage is if it gets aphids, then whiteflies attracted to yellowing leaves, they are hard to hose out of the leaves.
  • Siberian Kale is a curly edged flat leaf variety. If you like your curls, but not your aphids, you might prefer this beauty. It’s leaves are light blue-green with white stems. It is the most tender variety, making it a great choice for raw salads.
  • Red Russian is a flat leaved low variety, with a red/purple midrib, beautiful among your ornamental yard plants!
  • Red Bor, a completely purple beauty, midribs and leaves, is perfect for edible landscaping. 3 to 5′ tall. It is mild and crisp!
  • Lacinato, aka Dinosaur Kale, is a bumply long narrow leaved variety that gets tall. Rainbow lacinato kale, image above, is more productive and quite prettier!
  • Ornamental kale, aka Salad Savoy, is such a pretty winter garden accent! Ruffly, maybe frilly, purple, white, green heads.

Kale, Brassica oleracea, varieties have differing tastes. Some are more peppery to a bit bitter, like Curly Leaf; Red Russian is milder. Some are snacks in the field, while others need some cooking or even disguising in a stew with other veggies if you aren’t a kale lover, but want the nutrition. Salad Savoy is mild and tender.

Soil  Fertilize well at planting time because your plant will be working hard, leaf after leaf, forever and ever! Kale grows best when your soil is mixed with organic matter and perhaps a tad of lime in the soil. Overplant, closely, to start, for lots of little plants for salads, then keep thinning to 24 to 36 inch centers for your final spacing. Even my dwarf kales get up to 36″ wide!

Intermingle with companion plants and different varieties of kales and Brassicas! Cilantro enhances Brassicas. Lettuces repel cabbage butterflies. Different varieties mature at different times and you will have less pests like aphids.

In SoCal weather your kale will grow up to 4 years even though it is a biennial. Feed them time to time because they are heavy producers, a continuous leaf crop. Dig in a compost, worm castings, manure chow. Be careful not to break main roots. Scratch in some of those delicious box powder ferts, or if you live in Santa Barbara get that super landscape mix at Island Seed & Feed. Water it in well. Or get out your spade fork, poke in some holes and pour a compost, castings, manure tea down the holes! Your soil, your kale, and the faeries will dance in the moonlight!

Mildews, yuk. Severely infected plants may have reduced yields, shortened production times, and fruit/leaves that have little flavor. Powdery mildews like warm and dry weather, are windborn! Be good to neighboring gardeners, remove infected leaves ASAP! Some Powdery mildew spores can’t germinate in water, so water your kale overhead every couple of days to wash spores away and suppress the spread of the mildew!  Downey mildew, the fuzzy underleaf kind, likes cool moist weather, is spread by wind, water, and overwinters in your soil!

Mildew Prevention is the wise choice.

  • Do fall cleanup of leaves and debris.
  • Plant in full sun
  • Treat with homemade remedy: heaping tablespoon Baking soda, 1/4 cup non-fat powdered milk, one regular aspirin, teaspoon liquid dish soap per watering can/gallon immediately after planting transplants and every 10 days or so after that, and after rains.
  • Water less and early in the day.
  • Avoid excess fertilizer, use slow release fertilizers instead.
  • Remove weeds and plant less closely to reduce humidity.

Apparently it is safe to eat steamed washed mildewed kale. But having read about spores overwintering in soil, I’m no longer putting it in my cold compost, likely a perfect habitat for it.

Varieties  Several webpages recommend getting mildew resistant varieties, but in all my searching I didn’t find one variety mentioned. If you do, please let us know! If, however, you are looking for cold hardiness, here is great information from Mother Earth News field trials! Kales are generally Heat tolerant but even more heat tolerant varieties are surely coming. Coastal SoCal kales grow all year long and the most severe condition in recent years is heat!

The nutritional value of kale is superb, both in disease prevention and treatment!

  • The trick is to balance the nutrition versus the calories. For example, kale has less calories, but sweet potatoes have more Vitamin A. But that kale does have 98% of our daily need!
  • Kale has less sodium and a surprisingly high Vitamin C count, in fact, raw kale has 200% the Daily Value we need! Even cooked, it has 71%! A cup of cooked kale or collards contains more vitamin C than an eight-ounce glass of orange juice, and more potassium than a banana. All that and only 55 calories!
  • One of the super features of kale is it has a high amount of bioaccessible Calcium, especially needed by older women! We can absorb 50 to 60% of kale’s calcium. A cup of kale has more calcium than a cup of milk, that many are allergic to! And, it is a top source of Vitamin K, also essential to bone health.
  • Steamed kale’s fiber-related components bind with bile acids in your digestive tract to lower your cholesterol levels. Raw kale does too, just not as much.
  • Extraordinarily, kale’s glucosinolates can help regulate detox at a genetic level!
  • Over 45 different flavonoids in kale, kaempferol and quercetin heading the list, combine both antioxidant and anti-inflammatory benefits that reduce your risk of cancer.

Proper Storage  Do not wash kale before storing. Water encourages spoilage. Remove as much air as you can from the plastic storage bag. Pop it in the fridge, it will keep for 5 days. The longer it is stored, the more bitter its flavor becomes.

Eat more, cook less! Eating a cup to 2 cups 2 to 3 times a week is good, 4 to 5 times is better! Steaming is best. If you have young thin stemmed kale leaves, cut the leaves into 1/2″ slices. If your kale is older, thick stemmed and you don’t want the stems, run a sharp knife along the stem to shave the leaves from the stem, cut those into 1/2″ slices. Let them sit for at least 5 minutes to enhance their health-promoting qualities, then steam for 5 minutes.

Tasty Culinary Adventures:  With most kales, young leaves can be added to a salad. Mature leaves are better in soups, quiches, stir fry, steamed over rice sprinkled with soy, or sautéed and tossed with your favorite dressing! Kale chips are easy to make; dry and sprinkle with your favorite flavors! Have you had it chopped with scrambled eggs for breakfast?! Make a cream of kale soup, kale potato soup. Add to accent your fish chowder. Add to winter stews, or with cream of Butternut squash! Chopped and steamed with diced potatoes, diagonally sliced carrots, and onions, all tossed with olive oil. Are you hungry yet? Get rad and try a smoothie! With yogurt and berries, mmm, delish! Finely chopped in hummus, or super tender baby leaves, thinnings, chopped in salad, or sprinkled with enthusiasm in enchiladas!

Cool kale salads! Delish with dried cranberries, toasted or raw cashew pieces, vegan mayonnaise and a little lemon juice. With fruits like avocados, apples, pears. Napa or red cabbage, carrots, pumpkin seeds and walnuts. Dress to taste with vinaigrette, sesame-ginger or tahini dressing. How about chopped kale, pine nuts, and feta cheese with whole grain pasta drizzled with olive oil?! If your plant flowers, those are edible too! Just run your fingers along the stem then sprinkle the flowers over your salad.

Homemade Pickles are high in Probiotics!Believe it or not, the homemade common green pickle is an excellent probiotics food source.  So is homemade sauerkraut, considered a probiotic super food! And the ‘sauerkraut’ can be made of any of the Brassica family plants – broccoli, cabbage – green or red is fine, cauliflower, brussel sprouts, kale, bok choy, kohlrabi, etc.  These plants have the same bacteria as in yogurt, and the bacteria does all the work naturally!

Probiotics?  Say what?  What are they and why would you want them?!

Per WebMD.com ‘Probiotics are organisms such as bacteria or yeast that are believed to improve health. They are available in supplements and foods. The idea of taking live bacteria or yeast may seem strange at first. After all, we take antibiotics to fight bacteria. But our bodies naturally teem with such organisms. The digestive system is home to more than 500 different types of bacteria. They help keep the intestines healthy and assist in digesting food. They are also believed to help the immune system.’

Pickling cucumbers are fun to grow, crunchy tasty off the vine, and the survivors are easy to make into pickles!  Basically, use any mix of spices that pleases you, add it to your jars.  Wash, leave whole or cut to fit, and puncture your cukes – so the brine is better absorbed, stuff them into the jar too.  Make a salt and water brine, pour it over them a 1/2″ more than the height of the cukes.  Ferment a few days and they’re yours!

HellaDelicious uses a marvelous spice mix (below), and has great tips on her page by page recipe – see all the details!  Or just do water and salt, forget all the spices!  But, I’ll bet you have a few of these spices handy and could quickly throw in a few, just your favorites, of course!  Be creative!  This works for any veggies you would like to pickle – cauliflower, beans, asparagus, onions, carrot slices, beets, tomatoes!

  • small handful fennel seeds (you gathered from an unsprayed place)
  • 6-10 black peppercorns
  • 1 T mustard seeds
  • 5-7 cloves
  • 5-6 cloves of garlic, sliced (you grew your own)
  • dill flower heads and leaves (you grew it next to your cukes)
  • small handful of coriander seeds (cilantro you let bolt and seed)
  • 1 horseradish root, sliced (fresh is great but it’s highly invasive)
  • cinnamon bark

Now.  Before you go running off to the grocery store to buy pickles and sauerkraut, know that, per Sarah, the Healthy Home Economist,

Foods that are pickled are those that have been preserved in an acidic medium. In the case of various types of supermarket pickles on the shelf, the pickling comes from vinegar. These vegetables, however, are not fermented (even though vinegar itself is the product of fermentation) and hence do not offer the probiotic and enzymatic value of homemade fermented vegetables.

Vegetables that you ferment in your kitchen using a starter, salt, and some filtered water create their own self preserving, acidic liquid that is a by-product of the fermentation process. This lactic acid is incredibly beneficial to digestion when consumed along with the fermented vegetables or even when sipped alone as anyone on the GAPS Intro Diet has discovered (cabbage juice anyone?). In other words, homemade fermented veggies are both fermented and pickled.  [Be sure to read the comments on her page too!]

She says not only are there probiotics, but these homemade foods

  • Enhance the vitamin content of the food.
  • Preserve and sometimes enhance the enzyme content of the food.
  • Improve nutrient bio-availability in the body.
  • Improve the digestibility of the food and even cooked foods that are consumed along with it!

This is a great time to install native plants and fruit trees, so see if any of this info affects where and how you place them.  A food forest can be anchored by a south opening ‘U’ shaped planting of trees that captures heat for growing veggies in its center area.  It can start with a single tree.  Read Toby Hemenway’s book ‘Gaia’s Garden,’ especially the chapter on Designing Garden Guilds.  Toby says “…biological support replaces human intervention, shifting the garden’s burden onto the broad back of nature.”  If you have time and inclination, see Linda & Larry’s Food Forest Video!  Besides their suburban Santa Barbara yard being a food forest, it is the epitome of edible landscaping!  Your nursery will begin stocking bare-root trees this month!  Santa Barbarans, have you heard of Norm Beard?  He’s the man to see, past President of California Rare Fruit Tree Growers!  You will be amazed what we can grow here, and Norm knows the varieties and stocks the ones that grow best here!

*Guild plants are plants that grow well together.  It’s a LOT more than companion planting by twos, two plants that like, enhance, or help each other, though that is wonderful too.  Happy plants make more food!  Guilds are systems of plants starting with a tree if you have the space!  Check out Permies.com on Guilds  If you love the idea of guilds, and apples, check out this Apple Tree Guild! – image at left.  See the details at the link.  A super functioning guild utilizes both vertical space and horizontal overlapping circles!

I am in hopes you will talk this up to your apartment owner, install it on your own property, model your veggie garden after it, share it with every gardener anywhere, of any kind that you know.  This principle is so important in many ways.  Guild lists can be made for every area, plant zone, specific for every tree!  Guild planting makes sense.

  • It’s economical.  Plants grow densely, produce more.  We are making on prem food forests when times are hard and may get harder.
  • Ecologically we are restoring native habitat when we plant and support those plants that use our water more wisely.
  • It is sustainable –  produces more food on less land, cuts food miles, no fuel, packaging.
  • Health is prime as we eat organic, much more nutritious food that hasn’t been depleted by shipping, storage and processing.

Broccoli! Beautiful and valuable to your health!

Broccoli may be the most nutritious of all the cole crops, which are among the most nutritious of all vegetables. Broccoli and cauliflower (and other members of the genus Brassica) contain very high levels of antioxidant and anticancer compounds. These  nutrients typically are more concentrated in flower buds than in leaves, and that makes broccoli and cauliflower better sources of vitamins and nutrients than cole crops in which only the leaves are eaten. The anti-cancer properties of these vegetables are so well established that the American Cancer Society recommends that Americans increase their intake of broccoli and other cole crops. Recent studies have shown that broccoli sprouts may be even higher in important antioxidants than the mature broccoli heads. Other research has suggested that the compounds in broccoli and other Brassicas can protect the eyes against macular degeneration, the leading cause of blindness in older people.  If you choose to eat broccoli leaves, you will find that there is significantly more vitamin A (16,000 IU per 100 grams) versus flower clusters – the heads (3,000 IU per 100 grams) or the stalks (400 IU per 100 grams).

Vegetarians rely heavily on broccoli because it’s high in calcium.

IN YOUR GARDEN….

  • Companions:  Cilantro makes it grow REALLY well, bigger, fuller, greener!  Lettuce amongst the Brassicas confuses Cabbage Moths which dislike Lettuce.
  • Brocs prefer full sun, though partial shade helps prevent bolting (suddenly making long flower stalks).
  • Brocs LOVE recently manured ground.  Well-drained, sandy loam soils rich in organic matter are ideal.  Broccoli plants will grow in almost any soil but prefer a pH between 6.0 and 7.0 for optimum growth. A pH within this range will discourage clubroot disease and maximize nutrient availability.
  • Seedlings should be 8″-10″ apart with 30″-36″ between the rows.  Broccoli yields and the size of broccoli heads are affected by plant spacing. The tighter the spacing the better the yields, but the broccoli heads will be smaller. If you intend to keep your plants for side shoots, plant taller varieties to the northmost so they won’t shade shorter summer plants you will soon be planting.
  • Mulch will help keep the ground cool and moist as well as reduce weed competition.
  • An even moisture supply is needed for broccoli transplants to become established and to produce good heads. Never let the seedbed dry out. In sandy soils this may require two to three waterings per day.
  • Put a ring of nitrogen around cabbage, broccoli and cauliflower plants, to grow bigger heads.
  • The center head produced by broccoli is always the largest. The secondary sprouts produce heads about the size of a silver dollar. Sidedressing with fertilizer can increase yields and size your side shoots.
  • Cool weather is essential once the flower heads start to form. It keeps growth steady.

Brocs are truly susceptible to aphids.  Yuk.  Grayish greenish soft little leggy things that blend right in with the side shoot florettes.  If you snap your fingers on the side shoot, you will see the aphids go flying.  Those side shoots I remove.  If aphids are in curled leaves, I hold the leaf open and hose them away with a strong burst of water!  Then I keep my eagle eyes on them, each day, checking to get rid of them before another colony forms.

Important planting tip: There are less aphids when you plant different varieties of brocs together!

Broccoli varieties vary considerably, tall, short, more heat tolerant or cold tolerant, some make tons of side shoots, small heads, large heads!  For smaller heads, grow quick maturing varieties.  Packman is the exception!

Cruiser 58 days to harvest; tolerant of dry conditions
Calabrese 58 – 80 days; Italian, large heads, many side shoots. Loves cool weather. Does best when transplanted outside mid-spring or late summer.  Considered a spring variety.  Disease resistant.
DeCicco 48 to 65 days; Italian heirloom, bountiful side shoots. Produces a good fall crop, considered a spring variety.  Early, so smaller main heads.
Green Comet 55 days; early; hybrid, 6” diameter head, very tolerant of diseases and weather stress. Heat tolerant.
Green Goliath 60 days; heavy producer, tolerant of extremes.  Prefers cool weather, considered a spring variety.
Nutribud, per Island Seed & Feed, is the most nutritious per studies, having significant amounts of glutamine, one of the energy sources for our brains!  Purple broccoli, in addition to this, contains anthocyanins which give it its colour. These have antioxidant effects, which are thought to lower the risk of some cancers and maintain a healthy urinary tract as well.
Packman 53 days; early hybrid, 9” head!  Excellent side-shoot production.
Waltham 29 85 days; late, cold resistant, prefers fall weather but has tolerance for late summer heat.

If you still want to plant broccoli now, January, be mindful of the days to maturity, and when you think you will be wanting space to start your spring for summer plants.  When it gets late in their season, cut lower foliage off so small summer plants can start under them while you are still harvesting your winter plants.  The days to maturity on seed packs starts with when you put the seed in the soil.  The days to maturity on transplants is from the time of transplant.  And broccoli is notorious for uneven maturity, so you will often see a range of days to maturity, like DeCicco above.  So don’t expect clockwork.

Harvest the main head while the buds are tight!  Cut about 5” down the stem so fat side branches and larger side shoots will form.  Cut at an angle so water will run off, not settle in the center and rot the central stalk.

The respiration rate of freshly harvested broccoli is very high, so get it in the fridge asap or it goes limp!  It should not be stored with fruits, such as apples or pears, which produce substantial quantities of ethylene, because this gas accelerates yellowing of the buds.

Dying parts of the Brassica family of plants produce a poison that prevents the seeds of some plants from growing.  Plants with small seeds, such as lettuce, are especially affected by the Brassica poison.  A professor at the University of Connecticut says Brassica plants should be removed from the soil after they have produced their crop.

If you didn’t harvest your side shoots and your broccoli has gone to flower, harvest the flowers and sprinkle them over your salad, toss them in your stir fry for a little peppery flavor!  You won’t get any more side shoots, but if you want seeds, leave the flowers, let the seeds come.  Fine long little pods will form.  Let them stay on the plant until dry, then harvest your seeds.  Pop the pods, remove the seeds so no moisture will remain to rot them.  This large species crosses easily though, so probably best to buy sure seeds unless you don’t mind mystery results!

The trick to producing excellent broccoli heads is to keep the broccoli plants growing at a strong steady pace. Top-dress the plants with compost or manure tea; or side-dress with blood-meal or fish emulsion; and water deeply. Repeat this process every 3-4 weeks until just before harvest!  John Evans, of Palmer, Alaska, holds the world’s record for his 1993 35 lb (no typo) broc!  He uses organic methods, including mycorrhizal fungi!  And, yes, moose eat broccoli!
