Climate Crisis Food Occidental Arts & Ecology Center Sonoma CA US

The Occidental Arts & Ecology Center (OAEC) is an 80-acre research, demonstration, advocacy and organizing center in Sonoma County, California. We live in a time of profound challenges that require immediate, courageous and strategic responses. We are confronted by global ecological and climate crises… OAEC supports diverse communities to design their own regenerative systems at the regional and local scale. OAEC supports change makers and communities to design for a resilient future.

There are other organizations like this one that are helping us plan specifically for our areas. Sometimes the processes of one situation can be used as a template, adapted for another area, the basic premises, sequences holding across the board.

July 2019 Kollibri Terre Sonnenblume’s latest article was published. The title reads: Our Veggie Gardens Won’t Feed us in a Real Crisis As things stand right now, for most of us he’s right.

As Veg Gardeners we are emissaries to all who would grow food! In a serious crisis, our skills may be called on to feed many people. Kollibri’s provocative article makes you think about how important our growing can be in these times of extreme climate situations.

Some of you may be permaculturists, already knowing about collaboration with the land, sustainability, self-reliance, having multiple support/backup systems. Others of you may be rank gardening beginners. Most of us are in progress. We need you all!

Kollibri’s experience is his. There are many stories to be told, many responses possible. Some of my thoughts and responses include:

  • Select safe land for your growing space carefully for the long term. Anticipate what changes you can, timing as possible. Have a backup plan in mind. Yes, there will be unanticipated events – a microburst storm, a devastating foreign insect coming through, huge hail where it hasn’t happened before, others.
  • Change your diet. In a crisis you might expect to let go of meat, diary, and grains, or reduce your intake dramatically. Instead of beef, raise fish or other animals, perhaps. Maybe your choice will be animals that provide milk and fur. How about chickens? They poop manure, scratch, eat insects, make eggs!
  • Learn about soil. Check out the soil chapter in the book Gaia’s Garden!
  • Plant efficient per square foot plants. Our small 10X20 Community Garden plots teach us that. Those plants can be high producers like zucchini, plants that produce prolifically all season long, or cut and come again types like lettuces and kales. In summer string beans are super producers – broad beans and long beans give you more bean for the space they take up!
  • Plant Perennial plants, like Tree Collards, for continuous crop all year and year after year.
  • If you have cold winters, plant potatoes that store well. In summer plant winter squashes that store well in winter. Set up an in-the-ground greenhouse to equalize seasonal temps.
  • Learn about Succession Planting. While one plant is growing, plant another round. Some plants are started every week.
  • Learn about Seed Saving so you allow time and space for that type of production as well.
  • Plant year round habitat for birds to keep pests down, and for bees and other pollinators to keep pollination going.
  • Check out what the indigenous ancestors in that area survived well on. Restore some of that process. It could be an efficient food forest. Could be ‘Tending the Wild,’ using edible native plants, as Kat Anderson writes about. If your land is hilly, terracing is a phenomenal and beautiful technique.
  • Plant plants that have over-the-top nutritional value like fast grower Garden Purslane, pur·sluhn, aka Verdolaga south of the border.
  • If you are planting for a family, consider the special food needs of children, people who are ill, elders. Plant herbs for medicine.

The Gardener’s New Emergency Kit Bag!

SEEDS  A gardener’s emergency kit bag is a little different! It likely includes important select seeds for all seasons in an airtight container! Select some productive fast growers, like lettuce and radish (has edible leaves too), and ones of plants that produce all season long. Select bush and pole beans, determinate and indeterminate tomatoes. Select heat, drought and cold tolerant plant seeds. Some will grow earlier crops that produce in cool weather! Some survive heat, grow later and more healthily in fall. Some will survive frosts, even freezing. Be sure to have seeds for all seasons. Some areas, especially flooded areas, it isn’t recommended to grow edible plants there for at least one full season, so you need access to fresh soil and to be prepared for every season. Remember, you won’t be the only hungry people. Take as many seeds as possible. Seeds for flood soil restoration. Seeds for sprouts!

SOIL  If you anticipate you would need ‘soil,’ whether you would be able to leave in a vehicle or intend to stay where you are, keep a couple or more bags of fresh clean compost around at all times. You can plant directly in compost. Remember, kitchen scraps can be processed to be used to make more compost. Think about including a lightweight folding shovel in your emergency kit.

What if you live in an apartment? Growing food in a north facing window system would be a challenge – not enough sun. If you have power, set up some grow lights. These days, thoughtfulness about your directional window placing could become vital. Install  window solar power devices for when your power is off! Many a fine container garden has been planted in windows, on balconies, along the stairs, on the walls, a pallet leaning against the wall, in hanging baskets, on trellises made of strings or wire. Creativity abounds! Also grow tasty high protein sprouts!

Weather Crises are now unpredictable. The modern survivor needs to be prepared for any kind of emergency at any location, at any time.

IN a Crisis situation, burning heat, a water wipe out, an extended freeze, it’s over. What do you do? In a worst case scenario, there may no longer be a nursery or transplants at it. Most crops planted from seed take two+ months to get into production. Lettuce/Microgreens are really fast, but even they take about two weeks minimum. Radish, an incredibly fast grower, takes about a month. Transportation may be an issue. You may need to migrate to land that has plants to forage. Carry your lettuce plantings with you – wagon, cart, bicycle, grocery cart, sleep with them to protect them. You may become vegan for a while. You may not be happy, but you won’t die, probably will lose some weight! Succession planting becomes a necessity.

Always have an emergency backup supply of dry food for until your new plants become available to eat. Be sure your food supply takes up little space and weighs little. You want to be able to carry it comfortably if need be. In airtight/waterproof bags pack: Jerky, nuts, the least bulky dried vegs and fruits. Keep a ready lightweight waterproof backpack.

Heat – Maybe Drought, Fire

In a serious heat situation you may need to migrate north to a cooler higher land with access to clean water. Plant right away in a sheltered, perhaps shaded area, use shade cloth if you can get it, branches if you can’t. Choose a north facing slope for less sun. If there is no slope, build one as you can. Put up windbreaks to slow drying wind. If the soil is sandy, compost, compost, compost for water holding capacity. Bring seaweed from the ocean if you are coastal. Mulch to cool down the soil. If it is windy, put shade cloth or another cover to hold the mulch in place, especially if your land is sloped. The Zuni used ‘gravel,’ handpicked pebbles as ‘mulch’ in their waffle spaces. Use the old Zuni humble technique of Waffle gardeningThey knew how to garden in heat! Simplest and cheapest is to set up an underground greenhouse to equalize seasonal temps. Make it the right size for your needs. Dig it right into the side of a hill or slope if possible. You want that shade and shelter for both you and the plants. In the most urban situations like New York City, use those balconies, the rooftops, a window! Just be sure the balcony or roof will support the additional weight of soil and water. Wherever you plant, choose highly productive plants per square foot. Pole beans on a trellis! Bush Zucchini. Cut-and-come-again plants like chard, celery, lettuce/microgreens, kales. Chard, celery and lettuce need a lot of water. Otherwise, choose plants that are heat and drought tolerant.

In the long term, plant more trees like fast grower legume trees that feed the soil and cool the Earth. Plant them in Bioswales that hold moisture. The trees make shade, hold even more moisture, secure the soil with their roots. If possible, start where there is an initial water supply.

Flood

This is no longer new to us, but it’s a dramatic example. 7.23.19: Less than a month after New York City declared a climate emergency due to a heat wave, the reality of the crisis came crashing home Monday as streets across Brooklyn and Queens were inundated with dirty water flash flooding a day after power went down in three boroughs. These New Yorkers aren’t going to be growing much of their own food right now. But, do what you can! Use those balconies, the rooftops, a window that receives sun. A LOT can be grown in small spaces! Choose apartments wisely – sun facing in case you need that sun.

July 2019 NYC: Heat Wave, Blackouts, Flood back to back.

Some consider floods to be worse than droughts. Flood soils are dangerous, mask and gloves needed when you do remediation. You may not be able to grow edible plants there for at least a season.

You don’t want to plant in low areas after a flood. There are sewage, oils, plastics, garbage, disease in that water – likely Giardia, sometimes dead animals and humans, their fecal matter, fecal matter from nearby animal/chicken farms. Afterwards there are decaying materials. The soil that remains may be infected for a long time to come. Your first tactic would be to plant quick growing detoxing grasses, sunflowers and other plants that remove crud. Grow plants that reach deep into the soil and loosen its structure. Turn the soil to off gas toxins and so dangerous soil organisms will dry and die. Incorporate fresh clean compost. See more ideas

If your veg garden got flooded, here are some important tips from Colorado State Master Gardeners.

Planting in lowlands, below dams or water barriers, may not be the wise choice these days. An unusual amount of fast high water can blast right through these structures. The face of agriculture is changing. Grains and corn may become unprofitable choices, equaling less beef, higher prices. Water may bring silt and fertile soil or fast flooding may wash away all the topsoil leaving nutritionless, even dirty, soil. For your personal situation, choose higher land. If needed, protect it with terracing, done with a combination of bioswales and Hugelkultur. Choose the cleanest soil you can find to plant in.

Soil Restoration Please see this List of Phytoremediation Plants Used to Clean Contaminated Soil. Alfalfa grows quickly. Sunflowers take longer but are pretty. Willow trees. Per Anita B. Stone ‘Indian Grass is one of nine members of grasses that assist in phytoremediation plants. When planted on farmland, the reduction of pesticides and herbicides is significant. This list also includes Buffalo grass and Western wheatgrass, both capable of absorbing hydrocarbons from the land.’ Be sure to grow grasses appropriate to your location, native grasses if possible. Put some alfalfa and grass seeds in your emergency kit!

Three things are important! 1) Install a ground cover of water absorbing plants to detox the soil if you must replant in areas that have flooded. 2) Plant quick growing legume soil feeding plants and trees to feed and restore the soil. 3) Include plants that will grow deep and break up that soil, that make breathing airways for soil organisms that will help clean up the soil.

In the long term, in non-urban areas, or urban areas that are interspersed with land, build bioswales that interrupt stormwater flow and divert it to areas that need water! Interrupt flooding with many bioswales – just like in nature. Remember these words: Slow, Sink, Spread! Put rough big materials in the bottom to slow that water down so it has time to sink. Cleverly make that bioswale curvy – install ‘S’ curves, to slow that water down! Make side branches, bulges along the way, and deltas to spread that water. Again, make generous stormwater retention ponds along the way.

Freezing or an Extended Period of Exceptional Cold

There may be no snow plow, cell service; electricity may be out. It’s not safe outdoors for humans or pets, farm animals, livestock. Fishing at the lake through an ice hole may be all that’s left, IF you have a lake, if it has fish…

In an immediate situation, a southern migration may be in order, preferably to land with a clean water supply. If you stay, go Vegan, at least temporarily. Building a greenhouse may be a challenge. We want warmer, to reduce wind chill. The ground may be frozen, so no underground greenhouse yet. But you can build along a south facing slope, even a snowbank! If there is no slope, build one. Gather and pile up any materials at hand. Make the face from wood panels, plastic sheets, old windows, even logs and branches can do the job. At each side put up permeable wind barriers that make a U shape with your ‘greenhouse’ and let the area inside the U warm up. Use any reflective materials you can find to reflect heat onto your greenhouse.

In the long term, well in advance, build a greenhouse. Such a greenhouse can be built in the ground during summer months when the soil can be worked. Homesteaders in -40° weather, used their garage and came to two prime conclusions. #1 is Insulation! No surprise. #2 was their water tanks, a thermal mass that kept their water buckets near the tanks from freezing solid! They needed water for their plants! You can put in stoves, showers, sleeping quarters! Store foods you want to be cold well away from the stove area. Clearly, light is needed. That’s why a greenhouse against a slope or a mound you make is a practical idea. The south facing side can have light allowing material slanted against it steeply enough the snow falls down. If you want to collect it to make water, all the easier. Depending on what you want to do, snow can act as insulation. See excellent tips at SF Gate: How to Keep a Greenhouse Above Freezing. When you can, install a self-sufficient Solar Power System for energy to keep your plants warm, lighted and growing.

Green Sprouts in the Canadian Arctic A unique “Green Igloo” project is helping grow fresh vegetables in a remote Inuit community! The 42-foot growing dome, built in modular sections, can handle seven feet of snow and winds up to 110 miles per hour.

Keep extra bags of compost/manure, to plant in while soil isn’t available. Grow cold-tolerant crops that can even tolerate a freeze. Harvest frugally. Plants grow slowly when it’s cold. Grow plants that regrow – like lettuces/microgreens, bunch onions, spinach, chard, Kales. Plant successively to keep supplies coming. While one plant is regrowing you can harvest another area.

We have now discussed Greenhouses for both heat and freeze temps needs. Underground greenhouses accommodate both situations with less difficulty. Just be sure to make them safe from flooding or snowmeltBioswales work well with planting more trees and diverting water, making more space for the natural flow of water.

Climate Crisis Many Sprouts are surprisingly High in Protein!

We haven’t talked about SPROUTS! Technically, growing sprouts isn’t gardening, but it’s a relative! In all cases, Heat, Flood and Freeze they can be grown easily and super quickly, 2 to 5 days, in light weight containers. Select seeds that have plenty of protein! Make a fast growing mix and a slower mix. Mix in some spicy seeds for tasty results. You do need water to rinse them and they need to be kept warm. You could carry them in your jacket when it’s cold. In the diagram below, particularly note the grams of Protein!

If you are starting over, you might consider a Food Forest. If you have enough land with good soil, they have special advantages, including the possibility of mitigating crisis situations. Same goes for the use of Permaculture techniques, which might include a Food Forest. Food Forests often start with, may already have trees you want in place. They can provide shade and windbreaks. Wood for winter. Food Forests provide high density production per square foot, a variety of foods and living needs in a much smaller space! It would serve you well to read up on both and possibly modify your long term plans for a safer, more sustainable and comfortable life.

Not everyone likes or wants to garden. If you are evacuated, right away select a food person. Could be an experienced veg gardener who knows how to get things going again. They will work intuitively and be innovative on their feet as needed. Select someone who has a natural inclination. If no one in your group likes gardening, appoint someone responsible and practical to do it anyway. Give them your support by working side by side with them as much as possible. It’s a start. Some people don’t yet know they would like to garden! Show them what you are growing; give them a few samples of your 100% fresh organic food with no packaging! That full bodied taste and fresh texture makes a huge difference! Someone who loves gardening enjoys the work it takes. A greater amount of fresh food will need to be grown to meet initial crisis needs.

Some of us Community Gardeners are considering meeting together if there is a serious crisis and we would evacuate together if need be. We could help people with the food situation. Local permaculturists might form a group to help our community in extreme circumstances. They might train for different kinds of climate situations. We need Permaculture First Responders on staff! Farmers might join an advocacy association to train key gardeners about mass production techniques. Neighborhood associations could create a seat on the council for a person to get knowledgeable and take charge of crisis food needs. Certain centrally located secure homes could be appointed as gathering places. Homeowners that already have veg gardens could be assisted to produce more.

The Green Bean Connection newsletter started as correspondence for the Santa Barbara CA USA, Pilgrim Terrace Community Garden. All three of Santa Barbara city community gardens are very coastal. Soil Germination Temperatures Veggies Parsons

The graph above is of best soil temps for seed sowing! And even then, some seeds are more cold or heat tolerant, so get enough seeds to try again should there is some kind of fail.

Challenging conditions can be shady areas, or if you are intermingling veggies in your landscape, areas shaded by permanent ornamental plants. Transplants are already up and more hardy, sun reaching sooner, so your wise choice may be to start with transplants, not seedlings started outside. If you are container gardening, move your container to follow the sun during the day. Use one of those little plant dolly thingies if it is a heavy container.

DARK AND LIGHT-SEEDED BEANS: Dark-seeded beans are more resistant to rotting in cool soil than light-seeded beans. Beans need a minimum soil temperature of 65°F to germinate well, otherwise rotting may occur.

Beans are crazy to grow! They will give you a good crop in soil that’s loamy, sandy, rocky, rich or poor and even in clay as long as it has good drainage. They do prefer slightly acid soil. Though beans do need regular water for their short roots, still, avoid planting them in shade with soil that stays wet.

When growing beans in a new garden site! Special tip from Bountiful Container: ‘With inoculant, the critical bacteria that enhance the plant’s ability to convert Nitrogen from air into N in the soil, are added to the soil. Either powder the inoculant on wet seed or sprinkle granules in the soil along with seeds. Grow stronger, produce more beans.’ Even simpler, if available, scatter a few spadesfuls of soil from last year’s bean patch into new planting sites.

Beans like days to be at least 70° and nights to dip no lower than 40°. It’s worthwhile to wait until those conditions are met. Otherwise, you’ll have spotty germination and stunted, spindly plants. Beans grow so quickly that waiting for ideal temperatures will be worth some patience.

Cucumber VarietiesCUCUMBERS

Warm, light, sandy loam soils are preferred for early production. Compost and composted manure is good. Cukes like moist well drained, fertile soil and need a pH above 6.0. A farmer says: Apply 6 to 10 pounds of fertilizer for each 100 foot of row, using care not to bring fertilizer into contact with the seed. A home gardener says: When I plant cukes, I dig out a hole, about a foot square, fill it with compost, and plant my seed right into the compost. No fertilizing the rest of the season and you’re not wasting fertilizer in soil between plants that the roots never touch.

A tropical vegetable, cucumbers thrive when the weather is hot and water is plentiful. If the weather is unseasonably cool, wait a while to mulch until the ground is warmed by the sun.

Sow seeds directly in the garden when daytime temperatures are at least 65° to 75°. They are frost tender and should not be planted until the soil has warmed up to 65°, some say 70°! Cukes grow well in daytime temperatures in the 70’s, best at 81° F to 101°.

Mini FYI: The inside of a cucumber can be up to twenty degrees cooler than the outside temperature. This is where the saying cool as a cumber came from!

Wherever you plant them, the key word for eggplant soil is ‘rich.’ Sandy loam or loam is lovely. Eggplants are greedy feeders; ideal eggplant soil is well-drained, rich in organic matter, including lots of well-rotted manure, and has about a neutral in pH. During the season, sidedress with extra compost. Keep the soil moist to promote maximum growth.

Eggplant do NOT thrive in very humid areas. Pollination is difficult when the weather conditions are very wet, overly humid or excessively hot.

The minimum soil temp needed for seed germination is 60° F. The optimum range is 75-90° F. 
Transplant at soil temp that is minimum 65°F.

Place transplants in the garden slightly deeper than they were in their pot. Cold soil will shock the plant and set it back several weeks.

Eggplants are more susceptible than tomato plants to injury from low temperatures and do not grow until temperatures warm. They like temps to remain above 68°, 70° to 85° F is even better.

Critical temperature for setting out eggplants isn’t the daytime high, but the nighttime low. Cool evenings will set back the seedlings’ growth and make them more susceptible to diseases. Wait until the evening temperatures are above 65° before putting in seedlings. Cold temperatures will stop plant and root growth reducing plant vigor and yields. If your crop is still producing in the fall, cover them on cold evenings to extend the harvest.

Don’t be in a rush to mulch. Mulching too early in the season keeps the soil cool, resulting in slow growth, poor fruit set, and shallow rooting.

California Wonder Peppers Changing Color - Eden Brothers imagePEPPERS, either hot or bell, need VERY RICH SOIL, are heavy feeders!  Place compost, worm castings, rotted manure under them when transplanting. Mix in 1 T Epsom Salts, Maxi Crop, Landscape Mix.  Sandy soils are preferred for the earliest plantings because they warm more rapidly in the spring. Heavier soils can be quite productive, provided they are well drained and irrigated with care.

Rather than in the soil, do foliar Epsom Salts! A cheap home remedy that can keep plants greener and bushier, enhance production of healthier fruit later in the season, and potentially help reduce blossom-end rot. Apply 1 tablespoon of granules around each transplant, but research has shown a foliar spray of a solution of 1 tablespoon Epsom salts per gallon of water at transplanting, first flowering, and fruit set is more effective! As a foliar spray, Epsom salts can be taken up quickly by plants, otherwise, it is sometimes hard for the plant to get it out of the soil because of calcium competition.

Peppers are Temp Particular! Hot peppers grow best in daytime air temperatures 65° to 85°F. Transplant when night time temperatures stay above 50°, 55° is better. Below that plants grow very slowly, have yellowish, puckered leaves, and look sickly, often don’t recover. Night temps between 60° and 70° are best. In temperatures greater than 85°F, peppers may drop their blossoms although set fruit will ripen. The ideal temperature for peppers is a daytime temperature around 75°F and a nighttime temperature around 62°F.

At soil temperatures above 65°, pepper growth accelerates. Plants may become stunted and never recover if either the soil or air temperature is much below 55°.

  • Nighttime temperatures below 60° F or above 75° F can reduce fruit set.
  • Plumping up! Gardeners in hot regions will need to be especially patient with big bells and sweet roasting peppers. Both of these tend to wait until the nights are longer and cooler in late summer before fruiting and plumping up. These folks may want to plant banana peppers or sweet non-bells, which will ripen in time to use with those bumper crops of tomatoes and basil. Peppers need time on the plant to absorb nutrients and water and plump up their flesh, so pack your patience.
  • Color Changes! Mother Earth News says: After reaching their maximum size, green peppers that are meant to turn red, will develop red pigments in 10 to 28 days, if daytime temperatures are between 65° and 75°. In southern regions where temperatures exceed that range, peppers turn yellowish and may acquire an off-color pallor that is not attractive. Below the optimum temperature range, color development slows dramatically; below 55°, it stops completely. If soil temperatures drop below 68°, pigment production declines and eventually ceases.

Zucchini Summer Squash YellowSQUASHES grow best in full sun! They like rich well-drained soil, high in organic matter, and require a high level of feeding. Zucchini, in particular, produce a lot and get hungry!

Days need to be at least 70° and nights to dip no lower than 40°. Summer squashes grow best in air temperatures ranging from 60° to 75°F.

Plant in a warm soil. If the soil is below 60° F, summer squash seeds are more likely to rot in the ground before sprouting. The ideal soil temperature for germination is 70-90° F. A doable temp is 65-70°F.

Tomatoes, Red Slicers and Cherries!

I add a good dose of animal manures and compost, and my usuals to the planting hole –- a huge handful of bone meal – for later blossoms, a handful of non-fat powdered milk – for the immune system, worm castings – immune system, a tad of coffee grounds. This robust combo works well.  As they decompose, coffee grounds appear to suppress some common fungal rots and wilts, including FUSARIUM! Go VERY LIGHTLY on the coffee grounds. Too much can kill your plants. It was found in studies, what worked well was coffee grounds part of a compost mix, was in one case comprising as little as 0.5% of the material. That’s only 1/2 a percent!

Temps are crucial! Tomatoes are not happy when there are

High daytime temperatures – above 85° F – select heat tolerant varieties
High Nighttime Temperatures – above 70° F – select heat tolerant varieties
Low Nighttime Temperatures – below 55° F

True, tomatoes are heat lovers, but per the University of NV, temperatures over 104° F, for only four hours, causes the flowers to abort! If you expect high summer temps, plant heat tolerant (“heat set”) varieties: Florasette, Heat Wave, Solar Set, Sunchaser, Sunmaster, Sunpride, Surfire. When temps are out of your tomatoes’ happiness range, they abort fruit set and go into survival mode, stop production. That’s why your plant may make no tomatoes for a period of time. Don’t think it is a quitter and pull it. It will start up again when temps lower.

High nighttime temps are even worse than high daytime temperatures because your plant never gets to rest.

In the spring, wait until nighttime temperatures are reliably above 55° F or protect your plants with a cover at night.

Soil Thermometer VeggiesMany seeds can be presprouted. Presprouting is super and clever because you know you have plants! Germination in the soil can be spotty, so get fresh seed from a reliable source and presprout! It’s easy and terrific fun to watch the little ones appear! See more

Regions have huge variances in planting time strategies, and even in the same yard there are micro niches that vary considerably, so get a thermometer and plant in the right place at the right time! See more

How to Harvest & Store Summer Veggies Abundance

HARVEST! Harvest at your veggie’s peak delicious moment! Juicy, crunchy, that certain squish in your mouth, sweet, full bodied flavor, vibrant texture, radiant, vitamin and mineral rich! Besides being delicious and beautiful, it keeps your plant in production. Left on the plant, fruits start to dry and your plant stops production, goes into seeding mode. The fruit toughens, withers, loses flavor, maybe rots, sometimes brings insect scavenger pests that clean up, but spread to other plants. So, harvest right on time and let that radiance fill you!

Tomatoes can be harvested when they are green or when they get the color you chose! Bend cherry toms back so you get the cap and stem. This keeps them from splitting open. O’ course, if they split, you absolutely must eat them on the spot so they don’t spoil! 🙂 No fridging! Keep toms at room temp. Pink tomatoes ripen to a better taste and red color if they are left at room temperature. They do not turn red in the refrigerator, and red tomatoes kept in the refrigerator lose their flavor. If you want a tom to ripen, place it in a paper bag with an apple. No problem freezing toms whole! Just remove the stem core. You can blanch them and remove the skins first, or not…your choice.

Cucumbers – no storing on the vine. Your plant thinks it’s done and stops producing. Cut, clip or carefully twist off while holding the vine. Probiotic pickle your cukes. Cucumbers are another room temp veggie. University of California, Davis, says cukes are sensitive to temperatures below 50°F. They thrive and last longer at room temp. However, cucumbers, eggplant and peppers can be kept in the refrigerator for 1 to 3 days if they are used soon after removal from the refrigerator.

Sweet Peppers – depends on the pepper. Let them stay on the plant if you planted ones for pretty colors. Cut or clip them off so not to damage your plant. Only wash them right before you plan on eating them; wetness decreases storage time. Store in a cool area, or only 1 to 3 days in a plastic bag in the vegetable crisper of refrigerator, separate from fruit. Green peppers will usually stay fresh longer than orange or red peppers. Quick-freeze ones you won’t be using right away! Slice, dice, and freeze in baggies in the amounts you anticipate using in a stir fry or stew.

String Beans Harvest just about daily. If they bulge with seeds and start to dry, your plant thinks it’s done and stops producing. Pick, pick, pick! Get them to the fridge vegetable drawer. If you have too many at once or want some for after season use, cut them to bite size pieces or freeze whole! Put as many per bag as you will use for the kind of meal you will use them for. If for a stew you will feast on for several days, you may want a larger quantity bag.

Carrots Check the shoulders of your carrots to see if they are the size you are wanting. A big carrot is not necessarily tough and woody. If you want tender snacking types, pull while they are smaller. Water well the day before pulling, dig down beside them to loosen them if necessary so they don’t break off in the ground. Carrots go limp if you leave them lying about. Cut the tops off to keep them fresh longer. Get them cooled off in the fridge veggie drawer in a closed container with plenty of moisture, either wrapped in a damp towel or dunk them in cold water every couple of days if they’re stored that long. Be creative with your cuts if you freeze some. Go diagonal, rippled, cubed, curled, sticks, or even whole!

Summer Squash, Zucchini Harvest in self defense! They get BIG, FAST! Some of you came from big families and like stuffing and baking them and would never think of harvesting them until they are huge, lotsa bang for your buck! Others have a family of 1, can’t possibly eat all that zuke, so harvest them quite small, fresh salad slicing size. The ridged types make pretty little star shaped slices! They like hanging out in the fridge, but not for long! They are more soft than carrots or peppers. Give away what you won’t use asap.

Lettuce can be harvested at just about any size, but definitely needs to be harvested before it bolts, puts up a stalk, or immediately after. It can be harvested several ways. Eat the thinnings of a group you may have deliberately overplanted! If it is at a size you like, pick lower leaves and take them to the kitchen immediately. Wash, spin dry if you have a spinner, put them in a bag in the fridge veggie drawer. Feast daily until they are gone, go harvest some more. If harvesting a bit at a time drives you nutty, give it a whack about 2 ” above the ground and leave the root there. Take that lovely beauty home and process as usual. Good chance the root in the ground will regrow more lettuce if you keep the area moist! It won’t likely be as big as the original plant, but you will have more lettuce. Or pull that root and toss it in the compost. Plant more lettuce! Your choice. If your plant has bolted, take the whole plant and the leaves that are still good.

Sweet Corn When the silks turn brown and you push your fingernail in a kernel and it squirts milky juice, it’s ready for harvest! It holds its sweetness only 2 to 5 days! Harvest early in the day, make time to your fridge or the barbie because the sugars turn to starch very quickly! If you can’t eat them right away, pop them in the freezer, husks on!

Melons Harvest sooner by placing ripening melons on upside down aluminum pie pans or cans to keep them off the damp soil. The reflected heat and light will help them ripen evenly and sooner than when they are shaded by foliage. Watermelons lose their flavor and deep red color if they are stored for longer than 3 days in the refrigerator. If you can’t eat them big ones fast enough, plant smaller size varieties, like container types, or harvest as soon as possible. Uncut, store in a cool dry place, out of the sun up to a couple weeks. Cut melons should be in the fridge, an open container is fine. In general, melons prefer your countertop. Really, no storing melons. Just eat ’em!

OR! Make melon sorbet! Simplest recipe: one melon, juice of one lime, a few squirts of honey (some ppl use sugar) blend and freeze. Tasty and healthy on a hot day! Use an ice cream machine if you like. Variations might be a dusting of salt, syrup steeped with mint. Serve with fresh blackberries, blueberries, raspberries. Mmm…..

Potatoes are ready for digging when the plant flowers and after. Wet up the soil until muddy, feel about for the biggest ones, leaving the others to get sizable for another harvest later. Store garlic, onions, potatoes, and sweet potatoes in a well ventilated area in the pantry. Protect potatoes from light to avoid greening; a paper bag works well.

Okra! If your summer has been hot enough you got some! They must be harvested before they get tough. Letting them get bigger simply doesn’t pay. So look carefully for mature fruits and take ’em! I grow the burgundy and ruby types, slice them fresh over my salads. Pretty little stars. Okra really is best fresh. Very fresh. Eat okra within a few days of buying it. Store okra loosely wrapped in a plastic bag in the fridge veggie drawer.

Strawberries Pick them when they are red! Don’t let them hang out on the plant where soil creatures or birds will nibble on them. Storing them is a little different. Quickly as possible, store fresh picked berries in a container lined with a paper towel or in a paper bag in the coldest part of your fridge. They will last about a week, but it’s more fun to eat them sooner!

The counter storage area should be away from direct sunlight to prevent produce from becoming too warm. And don’t put them in sealed plastic bags that don’t let them ripen and increase decay.

Per UC Davis: Refrigerated fruits and vegetables should be kept in perforated plastic bags in the produce drawers of the refrigerator. You can either purchase perforated plastic bags or make small holes with a sharp object in unperforated bags (about 20 pin holes per medium-size bag). Separate fruits from vegetables (use one drawer for each group) to minimize the detrimental effects of ethylene produced by the fruits on the vegetables. Use all refrigerated fruits and vegetables within a few days since longer storage results in loss of freshness and flavor.

Your SECOND HARVEST is SEEDS! As July goes on or in August, when you or your plant are ready, let your very best plants produce but don’t harvest the fruits. Beans get lumpy with seeds and will dry completely. Let them dry on the vine for full nutrition from the mother plant. Let a cucumber yellow and dry. Let the corn cob dry and the kernels get hard. Cukes, peppers, melons, okra and squash are easy. Just remove the seeds and let them dry. Label the drying containers with year and name! Tomatoes are a tiny bit of a process but not hard at all. See more!

Save enough seeds from your best plants for your own planting, for several rounds of planting across the next season, for replanting when there are losses, and some to give away or share at a seed swap. Keep the race going.

Give away or store what you can’t eat. Freezing is the simplest storage method. Cut veggies to the sizes you will use, put the quantity you will use in baggies, seal and freeze. Whole tomatoes, chopped peppers, beans, onions. If you need more than your freezer can hold, get into canning! Learn about it from a pro and do it right! Probiotic pickle your cukes and cabbages and anything else you want to! That is a super healthy option!

I would like to share this article with you.  Lovingly written, applies to all gardening!  Linda Buzzell, co-founder of Santa Barbara Organic Garden Club, has a true communion with plant beings, and I’m hoping we, you and I, will all work on bettering our connections with them as well.  Long before I started veggie gardening, less than a decade ago, I read Findhorn Garden and was impressed way back then, by the relationship the gardeners had with the land and the plants and how successful that was for them both.  Bless you for your kind attention.

A WINTER MEDITATION ON PRUNING

Winter and early spring are the seasons when many gardeners, orchardists and farmers — fancying themselves surgeons — approach their trees, shrubs and roses with knives, pruning shears and saws in hand, seemingly unaware that these plants are, as the Buddhists would say, sentient beings.

Most pruning is less a conversation between two of nature’s creatures and more an act of ruthless domination under the guise of necessity.

For some reason over the last few millennia we have come to believe that plants are unable to survive, bloom and fruit properly without human intervention. And while much of the painstaking breeding and hybridizing by our ancestors has provided us with an extraordinary variety of edible plants, it may be time to question some of the time-honored Western methods of plant care.

What’s shocking to many people is that scientific research is beginning to reveal the utter lack of necessity for most of the one-sided surgery we call pruning.  For example, a British study showed that rose bushes pruned with hedge clippers yielded as many flowers as those carefully manicured with hand pruners – and that roses left alone yielded still more!

Where did we get the arrogant idea that we know better than the plant itself how to maximize its productivity and health? Such a strange notion, when you think about it… perhaps part of the larger delusion that nature is here merely for us to exploit without thought of the damage we may be doing to individual living beings or our biosphere.

So when might our pruning interventions actually be helpful rather than hurtful? And for whom?

The first principle of permaculture is “observe and interact” – admirable advice in the present instance.  Taking time to respectfully see how the plant itself intends to grow, bloom and fruit allows us greater insight into if, how and when to intervene.

Vintage Gardens Nursery’s Gregg Lowery, heritage rose expert extraordinaire, points out that mostly we prune for our own reasons that have nothing to do with the plant in question. It’s a one way conversation. For instance, we may prune to make a plant look better to our eyes, our sense of what’s beautiful or “tidy.” Or we may need to prune for space, when a tree or bush begins to outgrow its allotted place – probably because we made the mistake of not allowing for full, natural growth when we planted it – our error, not the plant’s!

Rather than remove such a plant entirely, we may need to first apologize, and then gently shape it.  Not just to suit our ideas of aesthetics (again, to please us, not the plant), but hopefully to benefit both the plant and our space needs.

If so, we might want to observe that traditional pruning times and methods were usually designed for Northern conditions, to protect a tender plant from winter frosts. In a warm-winter climate this isn’t necessary, and yet many of us who live in Mediterranean climate zones dutifully hack away at our roses in usually-wet winters, reducing them to stubs and weakening them with radical surgery.  In fact, it’s usually better to do any pruning for size in the summer if possible, when lack of rain may ensure more sanitary conditions.

This whole “do no harm” philosophy of pruning owes a great debt to Japanese philosopher-farmer Masanobu Fukuoka, author of a hugely influential book called One Straw Revolution, who advocated what he called “natural farming” or what some have dubbed “The Zen of Farming,” in which we refrain from digging, cutting or intervening unnecessarily in natural soil and plant systems which we truly don’t understand. We also may need to refine our view of what’s beautiful, to appreciate nature’s own gardening style rather than the control-heavy European aesthetic.

If we do prune, perhaps we might initiate a respectful dialogue with our plants and trees, rather than a monologue. What might be helpful to the plant?  Perhaps the removal of a dead or diseased limb?  A limb that is rubbing against another in the wind?  A sucker from below the graft (if we have a grafter plant) that is draining energy from the top growth?

Observation is the key. And listening.  If we take the time to really get to know our plants, they will guide us in our care for them.

Earth Day 2011 Powered By the People” April 16, 17

The Community Environmental Council (CEC) will host the Santa Barbara Earth Day Festival at Alameda Park Saturday, April 16 and Sunday, April 17, 2011. The 2011 theme, “Powered by the People,” is in line with the CEC’s Fossil Free by ’33 campaign and emphasizes the power of daily choices in making Santa Barbara one of the first fossil-free communities in the nation.

The festival will feature approximately 250 exhibitors, a free valet bike parking section that is expected to hold over 1,000 bikes, and the third annual Green Shorts Film Festival. It will also include the festival’s 11th Green Car Show – featuring the largest collection of efficient and alternative fueled vehicles between Los Angeles and San Francisco and the longest-running show of its kind in the country.
